Before Michael Caines hangs up his apron for the final time at Gidleigh Park join us to celebrate his twenty one years at the hotel with this very special menu encapsulating his favourite dishes from his time here...


Terrine of roasted autumn vegetables
truffle vinaigrette

Red mullet
Thai purée, fennel and dill salad with tomato fondue

Devon quail
truffled egg yolk, potato and rosemary gnocchi with a tarragon jus


Wild mushroom risotto
Parmesan crisp and mushroom velouté

Boudin of lemon sole and langoustine mousse
crushed olive potatoes and a langoustine and vanilla bisque

Local lamb
olive crust, fondant potato, smoked aubergine, roast garlic and a tapenade jus


Hot orange and Grand Marnier soufflé
confit orange sorbet

Trio of chocolate
hazelnut and milk chocolate parfait, dark chocolate mousse on a chocolate sablé biscuit and white chocolate ice cream

Plate of apple
Tarte Tatin, mousse, cider ice cream and a Cox’s apple purée
